Preheat the oven to 350F and line a baking sheet with parchment paper.
In a large bowl, whisk together the vital wheat gluten, almond flour, arrowroot flour, oat fiber, coconut flour, baking powder, salt, Italian seasoning, garlic powder, and onion powder until evenly combined.
In a separate bowl, whisk together the eggs, Greek yogurt, olive oil, warm water, and vinegar until smooth.
Pour the wet mixture into the dry ingredients and mix until a dough forms, then knead for 2 to 3 minutes until the dough becomes more elastic.
Mix in the mozzarella cheese, let the dough rest for 5 minutes, then divide it into 2 portions and shape into long sub rolls with lightly flattened tops.
Top each roll with the mozzarella and parmesan mixture and a light sprinkle of extra Italian seasoning if desired.
Bake for 20 to 24 minutes until golden brown and cooked through.
Remove from the oven and wrap the hot rolls in parchment or a clean towel for 5 to 10 minutes before slicing to keep them soft.
