Keto 1 Minute Microwave Bread

  1. Add the vital wheat gluten, oat fiber, lupin flour, coconut flour, allulose, baking powder, xanthan gum, and salt to a small bowl and whisk until evenly combined.

  2. Add the water and olive oil to the same bowl.

  3. Mix with a spoon until the dough starts to come together, then use your hands to fully bring it into a dough.

  4. Knead the dough for about 30 seconds to 1 minute on a clean lightly greased surface or on parchment paper.

  5. Place the dough between 2 pieces of lightly greased parchment paper and roll it into your desired shape. For 2 sandwich slices, roll it into a large rectangle.

  6. If the dough springs back while rolling, let it rest for 1-2 minutes, then continue rolling once the gluten has relaxed.

  7. Transfer the rolled dough to a lightly greased plate or a greased microwave-safe rectangular container.

  8. Microwave for 1 minute to 1 minute 30 seconds depending on your microwave and the thickness of the dough. Do not overcook because the bread firms up as it cools.
